The Latigo kitchen takes pride in crafting exceptional meals that satisfy and delight. You won’t have to worry about choosing restaurants every day; and at each meal there are options enough to please everyone.  Those with dietary restrictions won’t be left out.  With some advance notice, we can accommodate nearly anything.

The day begins with an extensive array of breakfast opportunities; everything from fresh fruit, yogurt, and homemade granola, to pancakes, waffles, eggs any style, and our house-smoked bacon (which has been known to receive applause).

After mornings spent in the saddle, breathing invigorating mountain air, you’ll saunter through our lunch buffet.  Here we serve different hot entrees each day such as homemade pizza, beef and bison burgers on the grill, or pasta with homemade sauces.  If you desire something on the lighter side, we have a truly impressive salad and sandwich bar.

When the dinner bell rings, and you sit down at a white cloth draped table, prepare to be treated to a meal with all the charms of a fine restaurant yet none of the pretensions.  Using the finest ingredients, sustainably and locally sourced whenever possible, our chefs strive to create dishes that are creative, satisfying, wholesome, and elegant.  And the desserts…well, the desserts have to be tasted to be believed.

For the Kids

Keeping Them Satisfied

What the adults are having may not exactly be what the kids have in mind.Kids can always choose the same thing as the adults, but we find that they often devour simpler fare like chicken tenders, mac n’cheese, hot dogs, plain corn or beans, fried potatoes, plain pasta, or the old standbys of peanut butter and jelly, or grilled cheese sandwiches.

Soft drinks are provided in your cabins and at meals. They are included in your all-American plan. A selection of wines and beers are available for you to purchase. For snacks there's always fresh fruit, cookies, granola bars, and the like available in the dining room. We put a fresh jar of caramel corn in your cabin each day and restock your supply of soft drinks there.

Sample Dinner Menus

1) Grass fed beef ribeye filet topped with crispy sweet potato threads and a Japanese steak sauce or scallops infused with applewood smoke, and drizzled with an apple, rosemary sauce.  Smashed potatoes, and sautéed zucchini noodles  with blistered cherry tomatoes.  Homemade broccoli cheese rolls, and a baby spinach salad with kiwi fruit and a raspberry vinaigrette.  For dessert, a wedge of dark chocolate torte, with a dark chocolate crumble, passion fruit crème patisserie, and a blown sugar sphere filled with milk chocolate mousse.

2) Colorado lamb chops with a reduction of cabernet and black pepper or Loch Duart Scottish salmon with a balsamic gastrique and candied walnuts.  Lemon risotto with fresh basil, and maple glazed carrots with ginger.  Homemade molasses oat bread, and spring mix greens with honey mustard dressing topped with toasted pecans.  For dessert, an elderflower cheesecake with homemade graham cracker crumbs, elderflower Chantilly Cream, orange blossom honey, and a raspberry, long pepper sauce.

3) Bison flank steak roulade or a brace of quail with fennel pollen, apples, and a fino sherry glaze.  Mashed parsnips, and sautéed asparagus with wild mushrooms, carrot threads, and sweet potato purée. Homemade, whole wheat sheepherder’s bread, and a salad of red leaf lettuce and yellow bell peppers with honey balsamic vinaigrette. For dessert, a cold-brew coffee crème brulée, with a fresh, homemade, yeast-raised donut drizzled with homemade salted caramel.

For you vegetarians, our entrées might include these delectable dishes: black bean tart, spinach and cheese stuffed puff pastry, corn soufflé tomatoes, southwestern lentil salad, or artichoke, tomato, and basil pizza.
