Our guests often ask for recipes from the Latigo Ranch kitchen.  We plan to post a new recipe here each week. 

Lisa searches for recipe ideas and often finds new recipes to try, and if we like them, Randy experiments to figure out how to make them work when preparing them for 30+ guests.  Sometimes what we end up with is quite different from the original  and other times we make little change.  One thing to remember is that recipes are guidelines, and you should feel free to modify these as your tastes dictate. 

Since most of you don't live at 9,000 ft. above sea level like we do, we have adjusted the recipes for baked goods for low altitude.  If you do need to correct for higher altitudes, please feel free to email us for suggestions.

GF Molasses Cake by Lisa

 Not only is this a tasty gluten free treat, but it also can be a very healthy dessert option.  If you use a healthy butter substitute and a cholesterol-free  egg substitute, it’s practically harmless!

Double Chocolate Pudding by Lisa

 Lots of silence except for the sounds of spoons getting every last bit out of the bowl.  That’s what I heard at our table tonight when I made this chocolate pudding.  We found the recipe in Food and Wine, and with a few healthy alterations, we’re going to be making this often.

 I’ve been enjoying learning about gluten free baking with the cookbook from the Culinary Institute of America.  It has 5 different blends that create different textures in the product, so as I discover new successes from the book, I’ll include the composition of the blend that’s called for.

Turkey Vegetable Soup by Lisa

 Here is a great way to use up extra turkey.  We loved this soup for a light dinner or a substantial lunch.  Some crusty garlic bread rounds out the meal delightfully.

 It’s not too hard to make a gluten free chili or soup, but it was a good challenge to come up with cornbread to accompany it.  This was a favorite!

 These are quite tasty for being gluten free, dairy free, and sugar free.  Who would have thought you could do that?  The recipe came from the helpful magazine, Living Without.

Quinoa Wonder Bread by Lisa

 After experimenting with gluten free bread most of the summer, this was determined to be the favorite recipe.  It’s soft but sturdy, makes great sandwiches or French toast, and isn’t gritty.  The recipe came from the helpful magazine, Living Without.

Macadamia Cranberry Cookies by Lisa

 I get daily recipe suggestions from MyRecipes.com, and this cookie turned out to be a big winner with my family.  I can see it becoming a regular feature of our cookie jar.

Snickers Cookies by Lisa

 These peanut butter cookies have a special treat inside that ‘puts them over the top’ as my kids told me.I made them healthier by using ½ C of Smart Balance butter sticks and ½ C canola oil.  I also used Egg Beaters instead of real eggs.  Not exactly a healthy snack, but at least with those modifications, they weren’t as harmful.
