This tasty quiche is a wonderful entrée for a vegetarian or a side dish to round out a hearty meal.

Almost just as easy as serving plain asparagus, this offers some bold flavors to brighten up the plate.

This was a great way to dress up fresh vegetables without going to a lot of extra work or involving too many calories.  I found the recipe in a past issue of Light and Tasty.

This is a tasty vegetarian dish that is perfect for a weekend breakfast, a hearty lunch, or a great dinner.  I love that it uses leftover cooked brown rice.  I used an egg substitute instead of real eggs to save on the cholesterol, and it worked well.
