 Yummy, healthy, low fat...

 I came across this recipe when I had an abundance of zucchini.  It’s a delightful way to blend vegetables and fruit for a new salad.

 This is a new and tasty discovery to put on a dinner salad. 

 We’ve discovered another great way to eat vegetables.  This salad requires a bit of pre-planning as it needs to be refrigerated for two days before you serve, but we think it’s worth the wait!  This recipe came from Taste of Home.

I’ve been searching for delicious, healthy, low fat salad dressings this winter, and this one is definitely a keeper.  Although it contains some fat from the avocado, there are enough good nutrients to off-set the 2 g of fat per serving.  Just 31 calories in 2 Tablespoons.

Not only is this a healthy and delicious lunch salad, with or without a bun, but it is also a great way to use up leftover chicken or turkey.
 

We served this delicious salad to our delightful New Year’s guests a few days ago, and I promised to post it so that they could prepare it at home.  I used apples instead of pears, but they’re equally good.

A zesty and rambunctious salad, it got rave reviews from all over!
