This is an interesting use for watermelon. It looks red like tomatoes, so you need to provide warning to unsuspecting eaters or the first bite will be so startling that they might not enjoy it. It really is good though.

You can adjust the "heat" depending upon how spicy the sausage is you use. We like the Southwestern feel of this dip. It doesn't last long, and we almost never have leftovers.
