Banana Bread

 This old family recipe is a favorite of ours.  I like it because it’s a great vehicle for brown bananas; plus it’s relatively healthy when I use egg beaters and oil.  Sometimes I even use a bit of whole wheat flour and stir in some ground flax seed.  I blend the first three ingredients until smooth before adding to the dry ingredients.  I like my banana bread smooth and void of chunks of bananas.  The leavening is adjusted to sea level.

We’ve discovered this summer that our guests have returned to eating breakfast breads that we make for the buffet.  For a number of years, our efforts at producing delicious carbohydrates were somewhat ignored at breakfast.  This has been one of the more popular items of ’09.

This recipe came from the November 2008 issue of Taste of Home.  It won rave reviews with our staff.  I even served them as dinner dessert one night for them, and they loved it. This recipe has not been adjusted to high altitude, so it should be good at sea level.

We love it when guests send us their favorite recipes to try after they’ve been to Latigo.  Last fall, Sheryl from Washington sent us a cookbook produced by a cooking instructor of hers.  She knew I’d love lots of the dishes, and she was right.  This tasty bread is my latest discovery from Julie Andersen’s book.  See the soup section for another recipe from this cookbook:  Santa Fe Chicken and Rice Soup.  The soup and this bread made for a great dinner.
